I love a good casserole! And as a busy mom, I’m always looking for easy casseroles that can be on the table quickly. Can any other busy moms relate? Amen and Amen. This one is one of my favorites, so I wanted to share!
Smoked Sausage & Wild Rice Casserole
Ingredients
1 lb smoked sausage, cut into rounds 1/2 in thick
1 package of Uncle Ben’s Long Grain & Wild Rice, cooked per instructions
3 tablespoons butter or ghee or margarine, divided
3 tablespoons of tapioca starch or regular flour
1 and 1/4 cup of chicken broth or bone broth
Instructions
(1) Preheat oven to 350 degrees.
(2) Cook rice per the instructions, and sit to the side.
(3) Slice smoked sausage, sit to the side.
(4) In a sauce pan, melt 2 tablespoons butter/ghee/margarine. Add in your 3 tablespoons of flour or tapioca starch and whisk until combined, pour in chicken broth and continue to whisk. Cook until thickened. If using flour, bring to a slight boil for a couple minutes. If using tapioca starch, it should thicken quickly.
(5) In an 8×8 casserole dish, mix together rice, smoked sausage and sauce until well combined. Take your remaining tablespoon of butter/ghee/margarine and divide it onto the top of the casserole.
(6) Bake for 25 minutes.
